FABRIZIO ANGELINI

Prof. Angelini, endocrinologist, is Professor of Psychoneuroendocrinology at University of Parma and Professor of Nutrition and Endocrinology at University of Pavia. He also holds a position of Head of the Medical Institute of Clinical Research “Ecomedica”. In the nutrition field, he mainly focuses on Nutrition and Supplementation in Sport and diagnosis and treatment of overweight and obesity. Prof. Angelini is the author of several scientific publications, President of the Italian Society of Nutrition in Sport and Wellness SINSeB, and also an Ambassador and Member of the Advisory Board in the International Society of Sport Nutrition (ISSN). He is a nutrition consultant for top-level athletes and football teams in the A-series (Juventus FC, AS Roma, Empoli FC).

ELENA CASIRAGHI

PhD, specialist in nutrition and integration for sport. He obtained a Master’s Degree in “Sport Science” at the Faculty of Sport Science at the “Università degli Studi” in Milan and the doctorate in “Physical Activity, Nutrition and Welfare”. As an athlete, he achieved results at International and National level in several sports (rowing, cyclism, triathlon). At the present time, he is in charge of “Enervit Nutrition Center – for Sport and Wellness” in Milan, advice center for nutrition, sport and welfare.

BENVENUTO CESTARO

PhD. Director of the School of Specialization in Nutrition Science - Faculty of Medicine, University of Milan. His research interests are aimed at physical-chemical and bio-functional properties of cell membranes, oxidative stress, the molecular mechanisms of lipoperoxidation that are at the basis of aging pathophysiological processes and the pathogenesis of the main metabolic diseases. He investigates also the preventive action exerted by the essential nutrients and dietary treatments against aging and major metabolic diseases. He has published over 200 articles in national and international journals

FRANCESCO CHIAPPERO

Doctor in Sports Science, he is an athletic director and owner of the center of evaluation “Movimento è vita”, which deals with planning the ideal training for the athlete, in particular in sports of endurance (cyclism, paracyclism, walking and triathlon). He is Alex Zanardi’s athletic director. He is also involved into biomechanical analysis and functional evaluations to improve the athletic outcome. Member and consultant of the “Equipe Entervit” for the scientific section, which studies and analyzes products of nutritional integration for sport.

DAVIDE GRASSI

Doctor and researcher at the Clinical Medicine Department, Public Health, Science of Life and Environment in the “Università degli Studi” at L’Aquila. His researches concern the study of vegetal substances and polyphenols, among which, those in tea and cocoa with reference to the action of the insulin. We can count many scientific publications.

SARA FARNETTI

Specialist Doctor in Internal Medicine. She has awarded with Ph.D. in Physiopathology of Metabolism and Nutrition, Expert in Functional Medical Nutrition. Dr Farnetti currently works as an Assistant Professor at Division of Cellular Transplantation, Nutrition and Diabetes Programs, Diabetes Research Institute at Miller School of Medicine at Miami University. DRI (Diabetes Research Institute) Federation, Wellness and Nutrition Program. She is also a member of AIC (Italian Celiac disease Association) and delegate for Celiac disease; she participates at scientific events about Celiac disease. Her scientific interests include the functional metabolic approach to nutrition, kinetic and dynamic studies of the main energy substrates in enteral and parenteral nutrition, and evaluation of nutritional status.

ENRICO FERRAZZI

Professor of Obstetrics and Gynecology at University of Milan and Director of Mother and Neonate Department at Polyclinic ‘Buzzi’ in Milan. He is the author of 310 articles published in the most scientific journals and a contributor to 67 scientific books. Prof. Ferrazzi has written 655 scientific publications including abstracts for international conferences peer reviewed for indexed journals. He is also an active member in 28 international research programs financed by governmental agencies from Italy, Europe and North America.

ASKER JEUKENDRUP

Scientist and researcher in sportive nutrition and triathlete Ironman of international level. He obtained the degree in Sports Science and the doctorate at the “University of Maastricht” with studies on the aspects of the metabolism of carbohydrates and fats during physical exercise. After a post-doctorate at the “University of Texas” in Austin, he was nominated Lecturerr at the “University of Birmingham”, where, for 12 years, he has kept the chair in “Biochemistry of the exercise” at the “Sports and Science of the Exercise School” and he has been director of the laboratory of Human Performance. He is the author of many books about sportive nutrition and more than 200 articles on scientific magazines about physical exercise and sportive nutrition. He is member of the American Diabetes Association and the European College of Sports Science.

CAROL S. JOHNSTON

Professor and Associate Director of the Nutrition Program in the School of Nutrition and Health Promotion at Arizona State University. She teaches both undergraduate and graduate courses and has an active research program. She has published over 100 research articles and book chapters, and she is often quoted in popular magazines reporting nutrition news. She is an expert in vitamin C metabolism, the medicinal use of vinegar, high protein/low carbohydrate diets for weight loss, and vegetarian diets. She currently chairs the Institutional Review Board at ASU which oversees human subject research at the University. She holds an elected position on an Expert Committee of the U.S. Pharmacopoeia in Washington DC. She has received several national awards from the American College of Nutrition for her professional and academic accomplishments.

JING X. KANG

Associate Professor of Medicine at Harvard Medical School and Director of the Laboratory for Lipid Medicine and Technology at MGH. He is the Secretary/Treasurer of the International Society of Nutrigenetics and Nutrigenomics and a member of the World Council on Genetics, Nutrition and Fitness for Health. Dr. Kang is one of the leading scientists in the field of omega-3 research. He studies the health effects of omega-3 fatty acids, how they work and how genetic technologies can be used to further their benefits. His work has contributed substantially to the advance of science and technology in his field. His innovations and breakthroughs have been recognized internationally. His work has contributed to the establishment of the American Heart Association’s Scientific Statement on increased intake of omega-3 for cardiovascular health. Dr. Kang is also interested in the development of innovative methods or devices for lipid analysis.

SERENA MARTEGANI

Sports doctor at the “Ambulatorio di Medicina dello Sport” in Varese, where, he takes care of the sportsmen’s health and he deals with Nutrition and Sport Training and Sport Therapy. He is Guest Lecturer at the “università degli Studi dell’Insuria”, at the Sport physiology course. Being a sport doctor, he followed several sports societies, eg Canottieri Gavurate, Ganottieri Varese, Varese Olona Nuoto. He is part of the Equipe Enervit where he continues to deepen his studies and scientific interests for nutrition in sport and in welfare.

LUCA MONDAZZI

Specialized Doctor in Nutrition science and in Gastroenterology. He is in charge of the Service for Sports Nutrition and of the “Dietology for the wellness” service – Mapei Sport Service, Olgiate Olona (VA). Guest Lecturer in Sports Dietology at the specialization school in Nutrition Science at the “Univeristà degli Studi” in Milan and member of the “Equipe Enervit”. Consultant of nutrition for professional athletes and for professional societies of different sports. We can count several publications on scientific magazines.

GREGORY PAUL

General manager of marketing and business development for sports nutritionat Dupont Nutrition & Health – USA; member of American College of Nutrition, Professional member of Institute of Food Technologists, member of American Society for Nutrional Sciences and American Society for Clinical Nutrition and American Dietetic Association. His research interest is dedicated to the nutrient metabolism. He is author of several scientific works published in national and international journals.

CAMILLO RICORDI

Professor and Director of the Diabetes Research Institute and Cell Transplant Center at the University of Miami. He also serves as President of RiMED Foundation and ISMETT (Mediterranean Institute of Transplantation and Advanced Therapies) in Palermo, Sicily, Italy. His research objective is to develop a cure for Type 1 Diabetes, and he is known for pioneering islet isolation techniques that are now used worldwide and for performing the first successful series of human islet allografts. His research interests include induction of immune tolerance, cellular therapies, stem cells and regenerative medicine strategies. Founder and former president of the Cell Transplant Society and the International Pancreas and Islet Transplant Association (IPITA), he currently serves as Chairperson of the NIH Clinical Islet Transplant Consortium. He has received numerous honors and awards, and was Knighted by the President of the Republic of Italy in the highest Order of the Republic (Order of Merit). Dr. Ricordi has authored over 700 scientific publications and has been awarded 18 patents.

STEFANO RIGHETTI

Specialized Doctor in cardiology, he works at the “Ospedale San Gerardo” in Monza. He is part of the “Equipe Enervit” and of the technical staff at the Federation of Light Athletic. He has a recent past as excellent middle and high-distance runner from 1500m to the half marathon. His scientifical interests are oriented to the application of modern training techniques and the study for injuries prevention.

GIOVANNI SCAPAGNINI

MD and neuroscientist; he is Associate Professor of Clinical Biochemistry at Medicine Department of University of Molise. He was Associate Professor of Rockefeller Neurosciences Institute at Rockville (MD – USA) and Researcher at Neurological Sciences Institute of CNR, Italy. He is visiting professor at Institute of Human Virology of University of Maryland - Baltimora – USA. He is qualified as a full professor of Human Nutrition Science. His field of research is on biological cell mechanisms of brain. He is author of several scientific works on antioxidant natural substances.

BARRY SEARS

Ph.D. - President of Inflammation Research Foundation, he is a leading authority on the dietary control of hormonal response. He began his scientific career as a researcher at the Boston University School of Medicine and the Massachusetts Institute of Technology. Over the last thirty years he has devoted his research efforts to the study of lipids. Dr. Sears’ research ha sled him to secure several patents in the area of hormonal and eicosanoids control by using foods as an oral drug especially in cardiovascular and neurologic conditions and diabetes. He is creator of the Zone diet, author of several scientific publications and books translated in many languages.

ARTEMIS SIMOPOULOS

Physician and endocrinologist is one of the leading experts in the field of research on omega-3 fatty acids. She was researcher at the National Institutes of Health (NIH) on the nutritional aspects of genetic and endocrine disorders, evolutionary aspects of diet and fatty acids, and the importance of a balanced ratio of omega-6/omega-3 fatty acids in health and disease and in growth and development. She is the founder and president of the Center for Genetics, Nutrition and Health, and a founding member of the International Society for the Study of Fatty Acids and Lipids (ISSFAL) in 1991. She is the founder and president of the International Society of Nutrigenetics/ Nutrigenomics (ISNN) and founder and chair of the World Council on Nutrition, Fitness and Health (WCNFH) since 2005. She is the author of The Omega Diet (HarperCollins, 1999) and has edited numerous books and journal supplements, in addition to publishing over 300 scientific papers.

RODOLFO TAVANA

Specialized Doctor in Orthopedics, traumatology and Sports Medicine. Lecturer at the “Univerità degli Studi dell’Insubria” in Varese, Faculty of Medicine, degree course in Sports Science. He has been responsible for National teams of cross-country skiing, light athletics and health-care provider of the football team A.C. Milan. He has followed Olympics and world champions such as Cova and Panetta. He is member of the American College of Sport Medicine, National Athletic Trainer’s Association.
